Tapa de dulce, or panela, piloncillo, or a "sugar cap," is a block of sweetness made from unrefined sugar, usually in an artisanal way.  Costa Ricans drink "sweet water" hot, and this version is extra special with warm spices great for fall and winter here in the temperate climate.  Agua de sapo, or "toad water," is a great cold drink for summer patios or the beach, and is so refreshing with ginger, lime, and even mint if you have it.
